Vineyards are more than 35 years old.
Grapes are harvested manually at full ripeness. Rigorous hand selection at a selection table. De-stemmed; 18 hours of cold pre-fermentation at 10°c; Pneumatic pressing; 3 days of cold settling to get very clean must. The fermentation starts in concrete tanks to be finished in French oak barrels (400L).
Ageing : 6 months in French oak casks with regular batonnage. Fine filtration. Wines are bottled only once.
Deep yellow with touch of green;
Expressive and greedy nose of honey, butter, apricot underlined by coconut and vanilla notes.
After a little while in your glass; the oak fragrances offer toffee and butter tones; medium bodied.
To the palate, the aging is perfectly balanced with a lively freshness; Citrus exit.
It pairs beautifully with fish dishes in sauce, noble poultries
To be served at : 12 – 14° C.
