Grape varieties

Cabernet Sauvignon 69% Merlot 30% 1% Cot
Vineyards are 35 years old.
Yield: 40hl/Ha

Vinification

Harvest: By machine, during the night then light crushing.
Cold pre-fermentation maceration: 3 days.
Fermentation: Traditional method for 10 to 12 days.
Ageing: 4 months on fine lees in stainless steel vats, then lightly filtered and bottled.

Tasting Notes

Colour: Cherry red with blue hues. Bright and clear
Nose: Red fruits with a hint of spice.
Palate: Fresh, frank and aromatic beautiful length ending with ripe red fruits.
Tannins: Fine and elegant
A delightful IGP blend which truly reflects the South of France.

Pairing

Apéritif, tapas, grilled vegetables and meat, pasta and everyday dishes.
Anecdote: Gaujor means “Joy” in Occitan, (the local dialect), making it the perfect wine for sharing with friends and for celebrations.
