Traditional vinification after destemming and picking grapes at full
maturity ( 13-13.5° ).
Fermentation temperature of 28-30° during 8 or 10 days.
Maceration and pumping over during 15 to 20 days .
Pressed wines are separated from strained wines and blended only after tastings.
After 12 months, wines are fined (gelatine ) then filtered (1,5-2µ).
Bottling is done only once.
Deep dark ruby colour.
Complex on the nose reminiscent of spices and ripe red fruit
such as cherries, blackberries, blackcurrant.
Muscular, long and richly concentrated. Good structure.
The tannins have mellowed and the flavours have married very well offering both warmth and complexity.
