Pebbled sandstone terraces facing south, south-east, protected from strong winds by surrounding forest areas.
Grape varietals : Syrah 60 % Grenache Noir 40 %
Yield 40 Hl / Ha Vineyards are 30 years old.
Grapes are harvested at optimal maturity, de-stemmed and pressed.
The juice is then vinified after 3 – 5 days cold settling at 7° C. 12-15 days fermentation takes place with a starting temperature of 10 – 12° until reaching 16 – 18°.
After 4 months tank ageing, the wine is then plate filtered.
Bottling takes place before spring.
A pale pink colour with gold shining hues. The nose is fruity and wonderfully intense. Ripe, silky tannins with red fruit and rose notes, and great length.
Best enjoyed chilled. Ideal on aperitif or to accompany white, grilled or BBQ meats as well as seasonal sauce dishes.
