Orientation: South, south-west.
Soil: Pebbled sandstone terraces.
Vineyards are 50 years old.
Yield: 15 Hl/ Ha
Harvest: By hand at full ripeness, hand sorted and de-stemmed.
Fermentation: 25 – 26°C.
Maceration & pumping over: 23 – 25°C for 15 – 21 days.
Press-juice and free-run juice are vinified separately and blended after tastings.
Ageing: 12 months in French oak barrels then fine filtration and bottling.
Colour: Intense, deep ruby red.
Nose & Palate: Rich and powerful, candied cherry, ripe red fruits, cocoa, liquorice and spices.
A fine wine, both complex and smooth.
Decanting is recommended.
Serve between 16°C – 18°C
A wine to be savoured with family and friends.
Perfect on its own or paired with premium cuts of meat, game and wine based stews.
