GRAPE VARIETY : 50 % Roussanne. 25% Bourboulenc. 25% Vermentino
YIELD : 50 Hl / Ha
Vineyards are 12 years old.
Grapes are picked at full maturity of 13°-13.5°.
After destemming; the grapes are pressed and its juice is settled during 48 hours at 5°C.
Vinification temperature at 18°to 20°C during 10-15 days .
AGEING : Aged on fines lies during 4 to 6 months and stirred twice a week.
15% of this juice is then aged in oak barrels during 6 months
This wine has a yellow colour with light green highlights.
Its nose is intense of white flowers, vanilla, and lime.
Balanced acidity, fat and round on the mouth with a final touch of vanilla.
This wine will marry well with fish cooked in sauce , poultry and white meats.

On a territory of rolled pebbles, this very beautiful Corbières Blanc rests on a dreamy blend, of which Roussanne (50%) constitutes the framework with a tender and enveloping touch of mouth, a rich bouquet of white fruits. The quarter of Vermentino smacks of citrus aroma and final freshness and draws on an additional complexity of a quarter of Bourboulenc, delicious on candy sugar and exotic fruits (pineapple, mango). The mouth is balanced, maturing on fine bindings gives the finish a toasted note of toasted hazelnut which prolongs its delicacy. A delight !
